A protected appellation

Bresse poultry is the only poultry produced in France to hold a protected designation of origin. You recognise it by the numbered ring the farmer fits to the bird’s left leg.

Of Bresse stock, the chicks are raised in complete freedom on grass runs, on a wholesome, natural diet of dairy products and cereals. Finishing takes place in the épinette, the traditional wooden fattening crate.

Two other birds, chosen for different reasons.

Coucou de Rennes

The Coucou de Rennes is an old, hardy chicken breed, raised outdoors on grass runs and fed on farm cereals. It is slow-growing: it is kept for a minimum of 130 days.

Its feed is at least 75% cereals, finished on whey. The bird brings back the flavours and textures of another time: its flesh has a taste of hazelnut. Drawn, it weighs between 1.2 and 2.3 kg.

Egyptian poularde

Like every poularde, the Egyptian poularde has never laid. At eighteen to twenty weeks she is fed on cow’s milk and maize, with a confiture added for close to a month.

It is that confiture that gives the flesh its extreme tenderness, and its almost sweet taste.
