An even grey coat and eyelids ringed with black: enough to stand the heat and the glare of the high pastures. It is a hardy breed, built for the mountains, calving easily and living long.
The Gasconne gives a fine meat with a close grain. Its distinctive taste and its subtle flavour made its name: butchers value the grain, those who eat it value the character.
Fairly lean and very tender, it suits quick cooking as well as slow braising.
