A long-haired coat and a pair of long horns: the Highland looks like nothing else. Its hardiness lets it face cold, snow and marshland, and cope just as well with heat.
It makes use of poor moorland grazing, and willingly eats the shrubby vegetation other breeds leave alone.
Its flavour comes from those Scottish highland grasses. The meat is marbled, remarkably tasty, rich in protein and iron, with very low cholesterol. The fat sits under the skin, which makes trimming straightforward.
